Spiced Nuts
2 egg whites
1 1/2 tsp salt
2/3 - 3/4 cup sugar
2 tsp cinnamon
1 Tbsp. paprika
1 1/2 tsps cayenne pepper
About 2 lbs nuts (pecans, walnuts, almonds, hazelnuts or a combination)
1/2 stick (4 Tbsps) unsalted butter, melted & cooled
Preheat oven to 325 F.
Beat whites and salt in a bowl with an electric mixer until very foamy. Gradually beat in sugar and spices. Stir in nuts and butter, combining well, and spread in a large shallow baking pan.
Bake nuts in middle of oven, stirring every 10 minutes, until crisp and golden, about 30 to 40 minutes. Spread nuts on a sheet of foil and cool. Break up nut clusters. Keep nuts in an airtight container at room temperature.

Spiced Applesauce Cake
adapted from Smitten Kitchen
For cake
3 cups (13.5 ounces) all-purpose flour
3 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
3/4 teaspoon ground ginger
1/2 teaspoon ground cardamom
1/4 teaspoon ground cloves
1 1/2 stick (6 ounces) unsalted butter, softened
1 1/2 cup packed light brown sugar
1 1/2 teaspoon vanilla extract
3 large eggs
2 1/4 cups unsweetened applesauce
For frosting
8 ounces cream cheese, softened
5 tablespoons unsalted butter, softened
1/2 teaspoon pure vanilla extract
1 1/2 cup (6 ounces) confectioners sugar
3/4 teaspoon cinnamon
Preheat oven to 350°F with rack in middle. Butter a 9 x 13-inch cake pan. If you don’t have a nonstick cake pan or are a little nervous, line the bottom with parchment paper and butter that too.
Make cake: Whisk together flour, baking powder, baking soda, salt, and spices. Beat butter, brown sugar, and vanilla with an electric mixer at high speed until pale and fluffy, 2 to 3 minutes. Add eggs one at a time, beating well after each addition, then beat in applesauce. At low speed, mix in flour mixture until just combined. The batter will look a little curdled and uneven but it will bake up perfectly.
Spread batter evenly in pan and bake until golden-brown and a wooden pick inserted into center comes out clean, about 35 to 40 minutes. Cool in pan 15 minutes. Run a knife around edge of cake to loosen, then invert onto a plate. Re-invert cake onto a rack to cool completely.
Make frosting: Beat cream cheese, butter, and vanilla with an electric mixer at high speed until fluffy. Sift confectioners sugar and cinnamon over cream cheese mixture, then beat at medium speed until incorporated. Spread frosting over top of cooled cake.
Do ahead: kept for three days . Keep frosted cake in the fridge. If you’d like to bake the cake further in advance, wrap it well and freeze it until the day you need it. Leave it out on the counter to defrost and frost it up to a day in advance.

Granola Muffins
1 cup granola
1/2 cup milk
1 cup golden raisins or other dried fruit
1 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1/4 cup honey
1/2 cup buttermilk or plain yogurt
1/4 cup canola oil
1 teaspoon vanilla extract
1. Preheat the oven to 375ºF with a rack in the middle. Oil 12 muffin cups. Combine the granola and milk in a bowl and let sit for 30 minutes. Meanwhile, cover the raisins with hot water and soak for 15 minutes. Drain and dry on paper towels. (I didn't soak the dried cherries I used.)
2. Sift together whole wheat flour, baking powder, baking soda, and salt.
3. In medium bowl, beat together the eggs, honey, buttermilk or yogurt, canola oil and vanilla. Quickly whisk in the flour, then fold in the granola and raisins. Combine well
4. Spoon into muffin cups, filling each about 3/4 full. Bake 20 to 25 minutes, until lightly browned. Cool in the tins for 10 minutes, then unmold and cool on a rack.
Yield: 12 muffins
Advance preparation: These will be good for a couple of days, and freeze well. Thaw overnight or in the microwave.

In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, salt, and sugar. Whisk well. Add the milk, buttermilk, vegetable oil, egg, and vanilla extract. Whisk to blend well, so that few (if any) lumps remain. Set aside to rest for 30 minutes.
Preheat a waffle iron.
Pour an appropriate amount of batter into your hot waffle maker. Cook until golden and crisp.

Jelly Roll
1/3 cup cornstarch
1/3 cup flour
5 egg yolks (1/3 cup)
1 tsp vanilla
5 egg whites
1/2 tsp. salt
1/3 cup sugar
powdered sugar
1/2 cup jelly or more to taste
whipped cream
Preheat oven to 400. Grease a 10 x 15 x 1/2 inch baking sheet and line it with parchment paper. Grease and lightly flour the paper.
Sift the cornstarch and flour. Put the egg yolks in a small bowl, add the vanilla, and stir to blend.
Beat the egg whites and salt in a large mixing bowl until foamy. Add the sugar gradually while beating, and continue to beat until the whites are stiff but moist. Fold one quarter of the beaten whites into the yolk mixture until just blended, then pour the yolk mixture over the remaining whites. Sift the flour-cornstarch mixture over the top, then fold the batter just until there are no streaks of egg white or flour showing. Spread the batter evenly in the prepared pan. Bake for 10 to 12 minutes, or until the top is light golden and a toothpick inserted in the center of the cake comes out clean.
While the cake is baking, dust a clean kitchen towel generously with powdered sugar sifted through a strainer. When the cake is done, remove from the oven and immediately turn it out onto the sugared towel. Peel off the paper. Roll the cake up in the towel from the long side and let it rest for a minute, then unroll and let rest a few minutes more. Roll back up in the towel and let it cool completely.
Unroll the cooled cake, and spread the surface with jelly (and whipped cream if desired). Re-roll the cake and place it on a serving platter, seam side down. Dust with powdered sugar.

Creamy Fudge
This recipe was on the back of the marshmallow cream jar for one year and then disappeared. I think it is much better than Fantasy Fudge. It has less sugar and more chocolate.
1 1/2 cups sugar
1/2 cup butter
5 oz can evaporated milk (2/3 cup)
7 oz jar marshmallow cream
3 cups chocolate chips ( I use 2 cups semi-sweet and 1 cup extra dark)
1/2 tsp. vanilla
Grease foil and put in a 9 x 9 inch pan.
Heat sugar, butter, milk and marshmallow cream in a 3 qt. saucepan over medium heat until mixture boils, stirring constantly. Boil and stir for 5 minutes.
Remove from heat. Add chocolate chips and vanilla, stirring until chips are melted.
Spread into pan. Refrigerate overnight. Cut into 1-inch squares. Store in fridge, keeps well.

Biscotti
Almond Whole-Wheat Biscotti
3 eggs
3/4 c. sugar
1 t. vanilla
1/2 t. almond extract
2 1/3 c. whole wheat flour
1 t. salt
1 t. baking soda
1/2 c. chopped almonds
1. Beat the eggs, sugar, and extracts together until thoroughly combined.
2. Add the dry ingredients and stir just until it comes together; dough will be sticky.
3. With wet hands, shape the dough into 2-3 logs (the width of the logs will be the length of your biscotti) and place on greased cookie sheets. Bake at 350 for 25 minutes.
4. Remove from oven and let cool (on the sheets) for 5-10 minutes. Remove to a cutting board and slice logs on a slight diagonal, into slices about 1/2"-3/4" thick. Lay slices cut-side-down on the cookie sheet and bake at 325 for 15 minutes. When cool, drizzle with or dip into milk or dark chocolate, if desired.

Baked Eggs with Roasted-Vegetable Hash
This recipe can be doubled. Serves 3-4.
5 eggs
1/2 cup milk
salt and pepper
1/2 cup shredded parmesan cheese
3 or 4 cremini mushrooms, coarsely chopped
1 large sweet potato, peeled and coarsely chopped
1 shallot, thinly sliced
1-2 Tbsps. olive oil
Preheat oven to 450 F, with racks in upper and lower thirds. Butter 1 quart baking dish.
Whisk together eggs, milk, cheese, and salt and pepper to taste. Pour into baking dish. Bake in upper third of oven until puffed, golden, and set, about 20 minutes.
Meanwhile, toss together mushrooms, sweet potato, shallot, oil, and salt and pepper in a baking pan. Spread in an even layer, then roast in lower third of oven while eggs are baking, stirring twice after 10 minutes, until tender and golden brown, about 18 minutes.
Serve eggs with roasted vegetables spooned on top.

Chocolate cupcakes
Makes 24
3/4 cup unsweetened cocoa powder
1 1/2 cups flour
1 1/2 cups sugar
1 1/2 tsp. baking soda
3/4 tsp. baking powder
3/4 tsp. salt
2 eggs
3/4 cup warm water
3/4 cup buttermilk
3 Tbsp. oil
1 tsp. vanilla
Preheat oven to 350 F. Line muffin tins with paper liners. Sift cocoa powder, flour, sugar, baking soda, baking powder, and salt into a large bowl. Add eggs, warm water, buttermilk, oil, and vanilla, and mix until smooth.
Divide batter among muffin cups, filling each 2/3 full. Bake until tops spring back when touched, about 20 minutes. Transfer cupcakes to wire racks and let cool. Cupcakes will keep, covered, for up to 3 days. They freeze beautifully.
These are frosted with basic buttercream.

Cornmeal Buttermilk Pancakes

2 Tbsp. sugar
1/2 tsp baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/4 cups buttermilk
2 eggs
3 Tbsp. butter, melted, cooled
Sift dry ingredients into a large bowl. Whisk buttermilk, eggs and melted butter together in a medium bowl. Add to dry ingredients and whisk until blended and smooth.
Cook on griddle or in skillet. Pancakes can be kept warm in a 300 oven on a baking sheet.

Caramel Corn
1 1/2 cups brown sugar
1/3 cup corn syrup
3/4 tsp salt
1/4 tsp baking soda
1/2 tsp vanilla
5-6 quarts popped popcorn (2/3 cup unpopped)
Preheat oven to 250 F. Place popped popcorn on 2 cookie sheets, making a pile in the center.
Melt butter in saucepan over medium heat. Add sugar, corn syrup, and salt. Bring to a boil, stirring constantly. Boil undisturbed 4 minutes. Remove from heat and stir in soda and vanilla. Pour over popcorn and stir to coat.
Bake for 1 hour, stirring every 15 minutes. After the first 15 minutes the caramel will be quite soft and can be distributed more evenly over the popcorn, it will be more brittle and not adhere as well after that. Let cool. Store in an airtight container.

Coleslaw
2 parts vinegar
1 part canola oil
Blend well.
Pour over sliced cabbage combined with any of the following: grated carrot, sliced bell pepper, green onions. Add dried cranberries or cherries, and sunflower seeds. This keeps well. I like to add the seeds and fruit later if I am making it in advance.
Minestrone
I usually add green beans and corn and red bell pepper and will saute some carrots before adding the chicken stock if I have time. This is an excellent way to use leftover vegetables and beans.
The pasta will soak up most the liquid if there are leftovers (which are excellent topped with sharp cheddar).
